These past few weeks have been so busy for me and with last week being Thanksgiving I was tired before it even got here! That's the downside of working in catering, you are over the food before you get to enjoy it with your family. But this year my family came to visit me for the holiday and I let them cook! My Poppy makes the best cornbread I've ever tasted! It's crunchy on the outside, nice and soft and full of flavor on the inside. It's addicting and it made the best cornbread stuffing I've ever tasted. I've never liked cornbread stuffing before but the one I had last week rocked!
The secret is a few things....Large cast iron skillet, self-rising white cornmeal, whole buttermilk and a screaming hot pan with oil.
Turn on the oven to 400 degrees and get your cast iron skillet screaming hot!
Add some oil in the bottom - unfortunately a lot so it will go up the sides and make the sides of the cornbread crispy.
Mix together Self-rising White Cornmeal & Whole Buttermilk to a pancake batter consistency. I know, old country cooking - no measurements!
Pour in your screaming hot pan and bake until fluffy. Then turn on the broiler on high to brown the top.
Drizzle a little more oil over the top and bam! There you go! Beware...it's addicting.
